Hi. I have a domain hosted at portland.co.uk and wanted to use another host for home.mydomain.com. Portland allow you to edit your mx records, so what would i enter if i want to send home.mydomain.com to ns1.thinkhost.com?

MX records are for your mail. There shouldn't be a need to dun DNS from one nameserver to another. Ask thinkhost to set up your subdomain on their servers, and then you should be able to DNS the subdomain as an A record from portland to the IP address of the server you're set up at thinkhost.
If you can't add an A record, then maybe you can have thinkhost set up a subdomain off one of their domains on the server and use CNAME (subdomain from portland to subdomain on thinkhost).
If I'm off, feel free to correct me. I'm dead tired, and I've never used portland so I really don't know how they run DNS there.

i meant dns records, sorry about that. portland has free form dns, so how would i add that line?
