If you want to keep the same name servers you need to update the IP's to the new hosts. Some domain control panels have the ability some do not if they do not you need to contact the domain provider

oh okay, so the host doesnt really need to do anything? only the domain providers side needs configuring to a new ip?

Yes that's right, you just login to your registrars control panel then change the nameservers to your new hosts nameservers that they have gave to you.

I've read somewhere that the recommended limit is 4 but there is no actual limit that I know of. I can't say I've seen many hosts using more than 2 nameservers though.

As many IPs as you have is how many nameservers you can use. There really isn't a need for more than 2 if you are only running one server. I personally have 14, but each pair points to a different server.

Just set up number 26 here :P. But as with Tree's, they all go to different servers.

Just thought I would note,
depending on the register you use
some you have to add the new ips to the nameservers and then remove the old ips. I believe Domainsite is like this (please correct me if im wrong)
