After developing a few sites/concept I'm almost ready to put them online. To organise my sites, I'd like to make a portofolio website. What should I do? I want to put a link/credit on the bottom of every page on every website. And it has to be the same everywhere.

Should I create something like a brand? Or should I say 'created by xxx'? Or create something like a small business/company, so people could ask me to create their custom websites (which I'm willing to do)...

Or something completely else?

If you want you hard labour bring you money I think that you need to have all your products copirighted licensed etc. Do it at once and you won't have any further problems

I just run mine under (myname).com . Whack in your previous work, what you can offer, and some contact details and you're good to go.
