I tried dyndns.org but you have to pay if you want to use your own domain.
Is there a free service that you can control your domain at, adding or modofying records and so on? Mainly I'd just want to modify the mx record of my domain. Thank you

DNS (nameserver) hosting if your host doesn't provide nameservers you can make use of theirs to point your domain to your website, but most common use is if you host your site yourself then you can direct your domain to your IP, without needing your own nameservers.

Would it just redirect or replace the IP fully?

It masks the IP, so basically a masked redirection service.

no-ip.com's dns service isn't free
it does lots of things. if you have a domain for example, you can change your mail records, add cnames, tell your domain which site to go to and much more
