How do you assign dns servers to subdomains? Like http://www.bla.com to ns1.mydomain.com and
www2.bla.com to ns1.zoneedit.com
www IN NS ns1.mydomain.com.
www2 IN NS ns1.zoneedit.com.

Why should one want to do such a thing? E.g. what is it good for?

it's great if you know what's going on. you can host yourname.com one host, and sub.yourname.com on another host.

Exactly what I wanted. I see you offer this Keith? Well, how long does it take to change dns?

it's noticable in usually a day or two from when the changes are made.
