if i have $100 or more in my Google adsense account and its before the end of the month like the 30 th or 31st will they mail that check for that month at the end of the month ? or is it just when i have over $100 in there they mail me the check any time of the month ?

at the end of each month, if you have $100+ in your account, they send you a cheque/check.

it said google will pay you within 30 days after the month you earn $100 so does that mean google pays every 2 months ?

nope, in the month they send cheques/checks away for the previous month. So this month, they're sending away payments from last month. And next month, they'll be sending payments from this month
