The difference with a reseller account, you get the freedom to create an unlimited number of full-featured hosting accounts. Each account you create will have it's own control panel.

Uh, no.
With a reseller account, you usually have 5-20x more space and bandwidth than a shared account. Then, you can use this space and bandwidth to create shared accounts, usually, depending on what software is used, with their own control panels. It is NOT unlimited, however. It is limited by how much space and bandwidth you are allotted, and how much space and bandwidth you then alott to the shared accounts you create.

Shared accounts are typically just for one website, weheras relesseler, you become your own hosting company.

Don't know what to add - reseller accounts are customised to you - to allow you to sell web site hosting to others shared is simply a bit of space.

one quick question, can a reseller know what their customer (with a shared account under the reseller account) is doing with their space and bandwidth, kinda like a traffic log in cpanel for example.

Yeah there are ways to monitor bandwidth usage, if that is what you are refering too.
