is there software that allows the editing of MIDI files such that i can take it and copy, paste, and delete from other MIDI files?

Cakewalk.. I've never really used it, but I know of a couple people who use it who say it's good.
Another one is Midisoft Recording studio (4.0?).. Really really good IMO, but it's been a long time since I've last used it, so I don't know if they still make it anymore.. Very nice and lots of features...
both allow you to see staff notation..

Cakewalk is ok.
Get something made be steinberg, like cubase.
I work in a studio and that is usually what i use.
