Are they fairly easy to install? I'm looking to use a ready made CMS and some suggested Joomla, Mambo, and phpNuke. Which is better and easiest to customize and install?

I found Mambo was probably the easiest to install.

Originally i was going to use Mambo but i realized that joomla was very easy to use. Even though both Mambo and Joomla are about the same thing in the way you manage it, i found Joomla to be easier to figure out. Plus if i ever need help i got a friend that knows alot about Joomla. The instalation part, I didn't have to do much for joomla except click a link since it was preinstalled. On the other hand i had to download Mambo and install it myself and it was very simple. It gives you specific errors (like if you don't CHMOD a file right or not) and i got it done in like 5 min. If you know both fairly well use Mambo since it's simple to install.

would fantastico install a script that's not pre-installed in it first of all? if so how?

No,

Ask the host to update their copy of fantastico and it should include the lastest available scripts.

EDIT: Yeh, the latest version installs both mambo and joomla. See here http://netenberg.com/fantastico_scripts.php

ok i installed joomla. how can i change it to show my banner instead of the joomla banner?

Check out the documentation. Or right click the logo and check the path, then upload your banner in the same place and same name as the file checked. (Although you may encounter a size problem, just resize it in an image editor or adjust it according to the documentation.)
