This info is mainly controlled by you, when you register a domain name, it asks for various contact details, that forms the whois basically.
So you can change this info where you registerd your domain name.
Who controls the whois information for your domain names? The information that comes up when you enter your domain name in places like this: http://www.whois.co.uk
If i wanted some of the info that comes up for my domain name, who do i ask to change it for me? Is it the place i got my domain name from, my webhost, nominet etc etc?

You should be able to login to some type of control panel at your domain registar and be able to change the information yourself. That's how it is for my reigstrar, anyway, but I'd like to think it'd be similar for others as well.
