How would I go about starting my own premium text message service?

Example: You would text "Example" to "12345" and in return for paying a certain price per month, it would also send the content of my choice?

There are companies that rent out the numbers (costs tens of thousands), and you can buy keywords from them (such as 'example') - different keywords cost different prices.
